The 35-year-old man from Hoppers Crossing was arrested at 2am by police in a convenience store car park in Melbourne's southwest on July 15.
He became unresponsive during the arrest and the officers performed CPR before calling for medical assistance.
The man was taken to hospital but died on Tuesday night.
A male sergeant and a male constable have been suspended while an investigation by the homicide squad continues.
The probe is being overseen by Professional Standards Command, which is standard practice when a person is seriously injured or dies while in custody.
